Fresh-pressed pineapple juice is transformative: silky, tropical, and capable of producing a lush foam when shaken hard (enough that some bartenders use it as a vegan egg-white substitute). Canned pineapple juice is perfectly acceptable for most tiki drinks — Dole from a can makes a fine Painkiller. Fresh is noticeably better if you have a juicer and a pineapple on hand.
