Heavy cream is 36% butterfat or more — high enough that it floats on top of cocktails when poured gently over the back of a spoon, and thick enough to hold a soft whip for an Irish Coffee. For a Brandy Alexander, heavy cream is shaken vigorously into the drink to emulsify; for a White Russian, it is floated as a distinct layer.
