Club soda is carbonated water with small amounts of sodium bicarbonate, sodium citrate, or potassium sulfate added to give it a faint mineral character. The carbonation is the point: fresh, cold, highly carbonated soda turns a shaken sour into a long fizz or a muddled mint-lime into a Mojito. Flat club soda makes a sad drink. Open fresh bottles per service.
