Espresso is pulled under pressure — typically 25 to 30 mL of dense, concentrated coffee with a golden crema on top. A fresh espresso shaken with vodka and coffee liqueur produces the Espresso Martini's signature thick foam; the crema is key. If espresso is unavailable, cold-brew concentrate is the best substitute, though the foam will not develop the same way.
