Egg white is the protein that produces the signature foam cap on a Whiskey Sour, Pisco Sour, and other classic sours. A dry shake (without ice) emulsifies the proteins; a second shake with ice chills and dilutes. The result is a glossy, silky cap that holds a bitters-and-toothpick design. Some bars substitute aquafaba (chickpea brine) for vegan sours with similar results.
