Agave nectar is the processed sap of the blue agave plant — the same plant tequila is distilled from. It is sweeter than sucrose and slightly more viscous. In a Tommy's Margarita (tequila, lime, agave nectar only), agave's fruity, floral, vaguely-molasses character complements the tequila rather than fighting it. Thin with a little water for easier pouring.
