Flavor profile: sweetspicy
Honey-ginger syrup is the Penicillin's defining ingredient: honey, water, and sliced fresh ginger simmered together for ten minutes, then cooled and strained. The ratio is typically 2:1 honey to water with an inch or two of fresh ginger. It keeps refrigerated for two weeks and makes fast work of ginger-forward whiskey sours at home.
