Dry vermouth (French style, sometimes called 'white' vermouth) is straw-colored, dry, and herbal — a different creature from its sweet Italian cousin. Noilly Prat Original Dry is the Martini benchmark; Dolin Dry is lighter and more modern. A Dry Martini is a conversation between gin and vermouth; starving the vermouth to a whispered mist misses the point. Keep refrigerated; use within a month.

Noilly Prat, founded in 1813 in Marseillan, France, is the original commercial dry vermouth and remains the benchmark.
