Citrus vodka is neutral vodka re-distilled or macerated with citrus peels — most commonly lemon, sometimes orange or a blend. Absolut Citron was the category's breakout in the 1980s and effectively created the Lemon Drop and Cosmopolitan as we know them. The citrus character bolsters fresh lemon or lime juice in ways plain vodka cannot, especially when the drink is shaken short and served cold. Good bars often make their own by steeping peels in quality vodka for 24 to 48 hours.
