Blackstrap rum is the densest end of the dark-rum spectrum, with aggressive molasses character — imagine the burnt, almost bitter edge of reduced cane syrup. Cruzan and Hamilton make the widely distributed cocktail blackstraps. In a Jungle Bird, blackstrap is a revelation: the molasses depth plays against Campari's bitterness and pineapple's acid in a way no other rum quite matches. A little goes a long way; blackstrap can overpower lighter ingredients.
