Amaro Nonino Quintessentia is produced by the Nonino family in Friuli. It is built on a base of grappa distilled from grape pomace, infused with Alpine herbs, and sweetened with caramel and honey. The result is amber, floral, bittersweet, and notably less aggressive than most amari — which is why it works so well in the Paper Plane, where it needs to play nicely with bourbon, Aperol, and lemon. It also drinks beautifully on its own, slightly chilled.
